Found this very useful tool on another blog. This one is for Mac, but there are ways to do this on Windows, as well. Download the tiny application from http://www.eidac.de. Quit iTunes. Open the application you just downloaded. Click the one and only button. Restart iTunes. THAT’S IT! This disable’s the auto backup that takes for ever. You are still able to do a manual backup, by right clicking on your device in the left hand menu of iTunes. Do the whole thing over again to enable auto backups. Seriously, it takes about half a second. There are Terminal commands to do this, as well, but this is much easier.
